Smoked Oyster Stew with Oyster Spread

Smoked Oysters have gotten a bad rap. More times than not, canned smoked oysters are chewy, rubbery, and lacking in flavor nuance. Sure, there are tasty canned smoked oyster options, but you'll end up paying more for less than if you smoked them yourself. This smoked oyster stew and spread recipe will make believers out of smoked oyster detractors, and using Butcher BBQ’s seasonings and spices, your kitchen will smell like a high-end restaurant without the high-end cost.

Ingredients:
32 oz Raw Oysters
2 stalks celery chopped
4 cups half-and-half
6 tablespoons butter
1 teaspoon Mountain Stream Fish Seasoning from Butcher BBQ
1 tablespoon Jalapeno & Bacon Flavored Summer Sausage Seasoning from Butcher BBQ
Savory Pecan Rub & Seasoning from Butcher BBQ
Salt to Taste
Hot Sauce (optional)
For many, when hearing the word oyster stew, they imagine complicated and fancy dishes that only restaurant chefs can create. But the secret is, there is nothing simpler than an oyster stew.
Start your smoker and set it to 225°F. Add your fruitwood (I chose apple for a crisp, sweet flavor) and place your raw oysters on a dehydrator sheet or grilling rack with small openings to keep the mollusks from sliding through the grates. We will smoke oysters for both recipes now, so there should be close to 40 oz of oysters in total. Dust your mollusks with Butcher BBQ's Savory Pecan Rub & Seasoning and smoke the oysters for 60-90 minutes, so they absorb all the fruity goodness. We want the oysters to be smoked but not chewy. Remove the rack from the grill carefully using Heat Resistant Gloves like these from Butcher BBQ. They are ultra-protective and unrestrictive.
Smoked Oyster Stew Instructions:

Add all the remaining stew ingredients to a large pot. Cook on the stovetop at medium-high heat, bringing the stew to a near boil. Keyword "near". Do not allow the mixture to boil, or you risk that the stew may curdle. Stir often, and when the ingredients have heated up nicely, the stew is done! Serve with oyster crackers or ladle in a bread bowl. This stew is perfect for a cold day or anytime you want a creamy, smoky stew. The Jalapeno & Bacon Flavored Summer Sausage Seasoning adds some nice heat and savory bacon flavor, which perfectly pairs with the Savory Pecan Seasoning.

Smoked Oyster Spread Ingredients:
1 (8-ounce) package cream cheese, softened
6 oz Smoked Oysters
1 teaspoon Chipotle Grilling Sauce & BBQ Sauce from Butcher BBQ
1 teaspoon Jalapeno & Bacon Flavored Summer Sausage Seasoning from Butcher BBQ

Instructions:
Place the cream cheese in a medium-sized bowl. Add smoked oysters and Mountain Stream Seasoning and stir well to combine. Done! Enjoy the spread on crackers, cucumber slices, or anything your heart desires. Maybe not graham crackers.
