Savory Grilled Vegetable Salad

Though vegetables are often overlooked on the grill, grilled vegetables are one of the easiest and most nutritious dishes to base your dinner around. Fresh grilled vegetables easily garner memories of long spring days and sunny afternoons! Aside from your favorite neutral cooking oil and a good sprinkle of Private Seasoning Rub, all you need is fresh produce including whole lemons and fresh parsley.


This Savory Grilled Vegetable Salad is as simple and easy as tossing the vegetables with the seasoning and cooking them on a hot grill pan. It comes together very quickly for a go-to weeknight side dish or entree that happens to be packed with nutrients. This recipe uses vegetables that all cook for approximately the same amount of time, ensuring that some don’t overcook and become mushy while others stay crunchy: If you want to customize the vegetables to whatever you prefer or what you already have, keep this in mind. A good splash of lemon juice and a sprinkle of roughly chopped parsley are the perfect finishing touches to bring everything together! Prep Time: 10 minutes Cook Time: 5-7 minutes

Ingredients

2 medium zucchinis, sliced and chopped into thirds

1 large bell pepper, jumbo chopped

1 bunch asparagus, trimmed and cut into bite sized pieces

1 cup cherry tomatoes

1 tablespoon neutral cooking oil (such as avocado oil)

1 ½ tablespoons Private Seasoning Rub

½ lemon, juiced

¼ cup parsley, roughly chopped



Directions

Place a grill plate on the grill and preheat the grill to medium-high.

Meanwhile, place the zucchini, bell pepper, asparagus, and cherry tomatoes in a large bowl. Drizzle with the neutral cooking oil and toss to coat.

Move seasoned vegetables to a preheated grill plate and cook, stirring and flipping vegetables occasionally, for approximately 5-7 minutes or until most vegetables are charred and just tender. The vegetables will continue to cook and get tender after you remove them.

Remove the grill plate from the grill immediately and let rest at room temperature for about 5 minutes.

Transfer vegetables to a large bowl and toss with fresh lemon juice and parsley. Serve hot.
