Gouda & Cheddar Smoked Potatoes

Cheese and potatoes are the ultimate duo. Who could say no to hot, tender bites of crispy potatoes smothered in a smoky, creamy blend of melty cheese? These cheesy smoked potatoes get their flavor from both a wood chip-filled Smoke Tube resting on the grill and Wyld Campground Seasoning.


In this recipe, the Campground Seasoning is mixed well with the likes of sour cream, cream cheese, mayonnaise, and gouda and cheddar cheese. Potatoes cook in the mixture in a pan on the grill next to the filled Smoke Tube, yielding a well-seasoned, flavor forward batch of smoked potatoes. This is a great dish to feed to a hungry family on game day, or enjoy all week long as a snack! Pair it with grilled protein and vegetables or a salad for a full meal. If you feel like getting even more smokey, use smoked gouda cheese instead of regular gouda. Either way, you’ll get crispy cheesy smoked potatoes that everyone will want to try. Don’t forget to enjoy those crispy bits on the bottom!

Cook time: 45 minutes

Ingredients and Equipment

3 inch-deep disposable aluminum pan (9x9 inches wide)

Wood chips or pellets of choice

  • ½ cup mayonnaise

  • ¾ cup sour cream

  • 4 oz cream cheese, softened at room temperature

  • 8 oz gouda cheese, cubed

  • 8 oz cheddar cheese, shredded

  • 1 ½ tsp Wyld Campground Seasoning

  • 3 pounds gold potatoes, cut into 1 inch cubes


In a large bowl (big enough for the cubed potatoes), mix softened cream cheese, mayonnaise, sour cream, and Wyld Campground Seasoning. Stir in cubed gouda and shredded cheddar cheese. Fold in cubed potatoes, mixing well so all potatoes are covered with cheese mixture. Transfer potatoes to a deep disposable aluminum grilling pan and cover with foil.

Prepare your Smoke Tube: Fill Smoke Tube with wood chips or pellets of choice, leaving about an inch of space at the top. Using a torch, light the wood in the tube and place on the grill. For more directions on how to use the Smoke Tube, watch an informative video here.


Preheat the grill to approximately 400ºF on medium heat. When the grill is hot, reduce the side of the grill that doesn’t have the smoke tube to low heat, and place the covered pan of potatoes on the grill. Close the grill and cook potatoes for 30 minutes. After 30 minutes, remove the foil from the potatoes and let cook for another 15 minutes or until the mixture is bubbly, and potatoes are crispy and fork tender.
