BBQ Vegetable Flatbread

An ultimate appetizer or entree, this BBQ vegetable flatbread is deliciously satisfying. It’s loaded with veggies and full of flavor thanks to Butcher BBQ’s Homestyle Sweet BBQ Sauce. You can use pizza dough or a premade flatbread and whatever type of cheese you like - we used pepper jack for just a little kick of heat. You can also use whatever type of vegetables you like, such as bell pepper, zucchini, tomato, asparagus, and more! We do recommend softer vegetables that cook quickly for this flatbread.

After just a few minutes on low heat on the grill, this BBQ flatbread is ready to be devoured. If you’d like, you can even further melt the cheese and cook the veggies by popping it in the oven under the broiler for a minute or two. The flatbread can be cut into big or small pieces and served as an appetizer or more of an entree, like pizza. It’s easily customizable and perfect for picky eaters, like kids! Seriously, who doesn’t love barbecue sauce and cheese?!
Ingredients
One 14 oz container pizza dough or premade flatbread
1 ½ cups monterey or pepper jack cheese, shredded
Sliced bell peppers, to top
Sliced red onion, to top
Sliced zucchini, to top
Butcher BBQ Steak and Brisket Rub
Directions
If using pizza dough, par-bake as directed. Preheat the grill to very low heat, approximately 200 degrees Fahrenheit.
Assemble flatbread: Spread Homestyle Sweet BBQ Sauce evenly over the flatbread. Sprinkle cheese on top of the BBQ sauce, then top with desired amount of bell pepper, red onion, and zucchini. Gently sprinkle some Butcher BBQ Steak and Brisket on the top to cover the vegetables.

Carefully place flatbread on the preheated grill and close the lid. Let cook on low or indirect heat for approximately 5 minutes, checking regularly to ensure the bottom doesn’t burn, until the cheese is melted and the edges are crisp.
Optional: Transfer the flatbread to the oven and broil on high for 2 minutes to further cook the vegetables and allow the cheese to bubble.
Carefully remove the flatbread from the grill and let cool for 5 minutes before slicing and serving.
